Healthy Vegan ‘Meatballs’

 

We love Italian food and are always inspired by what we eat to recreate it at home, but since we are vegetarians we cannot eat meatballs. We know they are a staple of Italian cooking so we decided to make them vegan with a healthy twist and lots of good flavor! These taste so good, we recommend doubling or tripling the batch for a yummy leftover meal or snacks:)

Makes: 15 “Meatballs”

What You’ll Need

  • 1 medium sweet onion
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon balsamic vinegar
  • 1/4 cup old fashioned rolled oats
  • 1/2 cup green peas*
  • 1 1/2 cups cooked brown rice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 2 tablespoons of nutritional yeast*
  • 1 large clove minced garlic
  • 1 teaspoon basil paste or 6 fresh basil leaves

To Make

Preheat your 350ºF and line a baking sheet with parchment paper. Dice your onion while you heat the olive up in a saucepan over medium heat. Add the onion and cook until transparent. Stir in the apple cider vinegar and cooker another minute. Add the balsamic and remove from heat after 1-2 more minutes of cooking. Add the remaining ingredients to a food processor and blend until a semi-chunky paste is formed. Roll into generous tablespoon size balls, makes about 15, and cook for 10 minutes, flip, then cook for another 10 minutes. Serve with your favorite sauce and pasta and enjoy!
