In the summertime we look for cold desserts because we find them most refreshing in the heat, and we find coconut to be a perfect fix. If you didn’t already know though we are HUGE chocoholics and we have to get our chocolate fix in, so we thought why not combine chocolate with coconut and create a frozen bar? These chocolate coconut bars are insanely delicious and addictive, so you might want to hide them from everyone else. They are also super simple with only eight ingredients and all you have to do is throw them in the food processor! The coconut base is sweet and you get flavors of coconut and cinnamon coming threw which we love, this pairs perfectly with the chocolate layer which isn’t exactly chocolate but we think it’s better than the real thing. Then, as if this bar could get any better, it’s sprinkled with sea salt to compliment the sweet flavors. But hold up, on top of all this deliciousness these bars are vegan, gluten free, and sugar free, which means you can eat 5 instead of 1, or for us the whole thing! What You’ll Need
For the coconut base:
• 2 cups shredded unsweetened coconut
• 2/3 cup pitted medjool dates (we love using these as a plant based sweetener)
• 1/2 cup unrefined coconut oil
• 1 tablespoon ground cinnamon
For the chocolate:
• 2/3 cup pitted medjool dates
• 2/3 cup milk (to make this vegan use a dairy free milk like oat or almond, and if you want to enhance the coconut flavor even more use coconut milk)
• 3/4 cup melted unrefined coconut oil
• 1/3 cup unsweetened cocoa powder
• 1/4 tsp salt (this is for the topping, we recommend sea salt or flaky salt)
To Make
Line a loaf pan with parchment paper, the size doesn’t have to be exact but for reference we used an 8×4′. In a large food processor, combine all listed ingredients for the coconut base and grind until everything is in small pieces. Tip: when you think it’s ready pinch a bit of it together and it should stick, if it doesn’t process it for a little longer. Using a spatula, add the coconut mix to the prepped pan and press until an even solid base is formed; there should be no loose crumbles. Toss this into the freezer while you make the chocolate. In a small food processor add all of the chocolate ingredients except for the salt. Let the food processor go until it has become a smooth mixture, it should be thick (the chocolate is not really chocolate, it is kind of a mix between fudge and mouse, mudge or fouse?!) Take the coconut base out of the freezer and using a spatula spread the chocolate over the base into one nice, smooth, even layer and sprinkle with the salt. Put the bars into the freezer for at least 10 minutes, just until they are cuttable and the chocolate has set. Eat up!
