Right from our Instagram – these blondies have been one of our MOST popular recipes ever, so we have to share on here! Not only are they a combination of our favorite flavors – banana and PB – but they are combined in a perfectly fudgy but crispy blondie form.
What You’ll Need
- 1 egg
- 1/4 cup melted coconut oil
- 1/2 cup creamy peanut butter
- 2 tablespoons almond milk
- 1 teaspoon vanilla
- generous 1/4 teaspoon baking soda
- 1 cup flour
- 3/4 cup brown or coconut sugar
- 1/8 teaspoon sea salt
- For the bananas: a banana (sliced into coins), 2 teaspoon brown sugar, 2 teaspoon coconut oil
How To Make
Preheat oven to 350ºF. Line a baking tin (loaf shape) with parchment (it helps to clip the sides when pouring the batter in.) Mix all the wets until smooth in a large bowl. Add the dries and mix until combined. In a greased skillet, add the coconut oil for the bananas and sprinkle the brown sugar on top. Flip, and cook until golden. Add half the batter to the pan, layer the bananas evenly on, then add the rest of the batter. Cook for 20 minutes, allow to cool, and enjoy!
