Quarantine has got us going absolutely CRAZY for these treats – we can’t tell you how many times we have made these! So we just had to share this delicacy that is healthy and (shhh, don’t tell anyone) that we ate a whole batch of in one day! I think that at the moment, everyone is still adjusting to this situation. But the thing to keep in mind is that it is NOT permanent! This is a temporary occurence in our life that people will later be learning about in school and we are living through it. We both agree that there is a lot of room for growth and thought and wanted to share with you a little of our routines that have got us keeping sane. On the weekdays, we wake up at about 8 (have to wake up early to make it feel a little normal) and get started right away on our work for the day. Emily has her two-ish cups of coffee with almond milk and blue agave syrup. Lyla usually makes breakfast right away but Emily waits until she is done with her work, about one or two hours, then whips up something special. We have been digging oatmeal and any kind of pancake we can think of. Then, if we are not consumed by Zooms, we both workout for about two hours and if the weather permits, go for a nice run to let loose some stress that’s been building up, we try and get outside every day. Lunch varies depending on the day and how late we stop working out but after we shower and find what we want to eat, we spend time looking at food videos! This is one of the best parts of the day and we love going on insta to look at food photos :). The afternoon is usually filled with cooking, cleaning, reading, or any activity that we can think of. Biking is always an option when it’s nice out! We always start making dinner around 6 or so then eat, find something new to make for dessert, and then watch some Gilmore Girls and eat popcorn on most nights! That is the most relaxing part of the day and gives us time to rewind and look back at our to-do lists and agendas and make sure we got everything done for the day. We really recommend that – it helps with structure and organization and here’s a tip – write down every little thing just so you can have the satisfaction of crossing it off! We even document the fun food we made and our workouts of the day. Hope everyone is staying safe, healthy, and sane!

What You’ll Need
For the crust:
- 2 cups rolled oats
- 1/2 mashed banana
- 1/4 cup plus 1 tablespoon maple syrup
- 1 tablespoon unsweetened applesauce
- 1/4 teaspoon cinnamon
- pinch of salt
For the filling:
- 1 banana
- 1/2 cup maple syrup
- 1/4 cup unsweetened apple sauce
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon cinnamon
- optional pinch of sea salt
To Make
Preheat your oven to 350ºF. To make the crust, finely grind the oats in a blender or food processor. Then, mix the oats with the cinnamon and salt. In a medium sized bowl, add the rest of the ingredients for the crust. In a greased muffin tray, scoop two generous tablespoons of the crust mixture. Press down well. (We like using the bottom of a cup or anything else that will fit in for this, if you are doing it with your hands it helps to run them under water beforehand.) Bake for about 13 minutes then cool for 5. To make the filling (this can be done while the crust is baking to save time!) blend all ingredients together in a food processor/blender until creamy. It’s that easy! Spoon about one tablespoon full of batter into each crust, sprinkle a bit of sea salt on each one if you’d like (we love the sweet salty combo) and bake for 19-20 minutes or until a tooth pick comes out clean. You should be able to touch the top and have it be solid. Cool completely – then enjoy!
