This was the first time I tried Gazpacho. I made it with my dad and I really liked it. We used fresh red cherries as the secret ingredient (not so secret anymore though). My mom said we shouldn’t use cherries, she thought it would be gross…but she was wrong and she like it! We served the gazpacho in mini glasses which you could drink or use a little spoon.
- 2 tomatoes
- 10 red fresh cherries
- 1/2 red onion
- 1 seedless cucumber
- Put each ingredient in foil and roast on grill for 15-20 minutes
- After, peel skin off tomatoes. Don’t forget to take the pits out of the cherries!
- Put all ingredients in a food processor. Chill. Chop up cucumber and top the gazpacho with the cucumber and fresh basil & Siracha!
