What You’ll Need
- 1 stick softened, salted butter
- 3/4 cup coconut sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup flour (all-purpose or gf alternative)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 4 oz chopped, good quality dark chocolate
- 1/2 cup mini (vegan) marshmallows
How To Make
Start by preheating oven to 350ºF and lining a baking sheet with parchment paper. Cream the butter and sugar in a stand or hand held mixer until fully combined. Add the egg and vanilla and beat until smooth. Then add the flour, baking soda, and baking powder and mix again until fully combined. Fold in the chocolate chunks. Scoop out 6 cookies in heaping tablespoons evenly on the cookie sheet. It will make about 10-12 cookies. Then top with about 5 mini marshmallows, lightly pressing down so they will stay on the cookie. Bake for 9-10 minutes then turn your oven to Hi broil and cook for 3 more minutes so that the marshmallows get nice and golden. Enjoy!
