These are most definitely a staple in our house during raspberry season! After taking a break from our blog, we wanted to share one of our favorites that is simple and delicious. These also got so much attention on our Instagram, we had to share to share them on here. They are super simple, and we suggest you make a few batches… with a family of four you could guess these don’t last longer than ten minutes!
What You’ll Need
- a package of fresh raspberries, washed
- either 1/3 cup peanut butter, make sure it is thick, or a peanut butter alternative (if using powder, make sure the mixture is not too liquid)
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
How To Prepare
Either using a little spoon or plastic piping bag, gently add peanut butter to the center of each raspberry. In a microwavable safe bowl, melt the chocolate chips and coconut oil. Do so using 30 second intervals and stirring in between as to not burn the chocolate. Dip each raspberry into the chocolate using a fork, gently placing on a parchment lined sheet. Chill in the fridge until the chocolate is set. If you want, you can freeze for a different kind of texture! Enjoy!
