Salted Caramel Date Cookies

One of the most popular recipes on our Instagram are these Salted Caramel Date Cookies – a favorite and staple in our house! We love how they are packed with healthy ingredients, but satisfy that sweet tooth craving. And they are thick and delicious; they almost never last in our house until they cool down!

What You’ll Need

  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 1/2 scoops vanilla protein powder
  • 1/4 cup old fashioned rolled oats
  • 3/4 cup oat flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of sea salt
  • 1/4 cup chocolate chips
  • 5 pitted, chopped dates
  • salted caramel chocolates

How To Make

In a medium bowl, start by mixing all the wet ingredients. Make sure the coconut oil is melted, but not too hot to scramble the egg. Add in the dries minus the chocolate chips and dates then stir until combined. Now add your chocolate and dates and mix in the fillers. You can even have fun here and add in extra stuff you have laying around your pantry – we love cranberries and peanut butter cups! Separate into 4 large balls (we call these the cookie bombs in our house for a reason) and add the salted caramel chocolates on top with an extra sprinkle of sea salt. Bake at 350ºF for 8-10 minutes.
