Peanut Butter Quinoa Crunch Bars

Sharing these irresistible Peanut Butter Quinoa Crunch Bars, a crazy popular recipe from our Instagram! They are a perfect grab and go bite, almost a snack sized version of Crunch Bars. We also love how simple these are because they are no bake. Plus they have added protein from our go to vanilla protein powder from Sprout Living which is super clean and tastes amazing!

What You’ll Need:

– 1/4 cup creamy peanut butter
– 3 tablespoon coconut oil, melted
– 2 tablespoons honey
– 1 teaspoon vanilla
– 2 cups puffed quinoa
– 2 scoops vanilla protein powder
– 1/3 cup semi sweet chocolate chips

Mix the wet ingredients, using only 2 tablespoons of the coconut oil, until combined. Then add the puffed quinoa, protein powder and mix. Pour into parchment lined loaf pan and set in the forge to chill while you melt the chocolate chips with the last tablespoon of coconut oil to spread over the top. Sprinkle with sea salt and put in the fridge until set. Slice up and enjoy!
