We are obsessed with pancakes if you couldn’t tell from our Insta feed, but when we don’t have as much time in the morning and still want pancakes this is are our go-to recipe because it is simple, filling, and healthy. It only has 6 main ingredients and is naturally gluten free, dairy free, and can easily be made vegan. Plus, they are fluffy and taste like banana bread–especially when topped with butter and maple–name a better breakfast!
What You’ll Need
- 1 egg*
- 1 ripe banana
- 1 Tbs applesauce
- 1/4 cup almond milk**
- 1 large scoop (vanilla) protein powder
- 1/4 cup rolled oats
- 3/4 tsp baking powder
- splash of vanilla
*flax egg works too
**any milk really works
To Make
Combine everything in a blender and blend until smooth. Let sit for at least 5 minutes. Cook tablespoon sized amounts on a greased skillet over medium heat. Cook each side until golden brown (about 3 minutes per side). Top with whatever you want and enjoy!
