No-Bake Almond Strawberry Bars

These bars are rich and full of flavor! Perfect for Valentine’s Day or a chocolate sweet tooth!

What You’ll Need


1 1/2 cup almond flour

1/4 cup maple syrup

1/4 tsp sea salt

1/4 cup coconut oil, melted

1/2 tsp almond extract


Strawberry Layer:

3 cups frozen strawberries 

Juice of half a lemon

Zest of a lemon

1/4 cup coconut sugar


Chocolate layer:

1/4 cup quality (dark) chocolate

1 Tbs coconut oil


To Make

To make the base combine all ingredients until thoroughly mixed. Spread out evenly on a parchment lined square baking dish and chill until firm. Meanwhile, combine all ingredients for the strawberry layer in a medium sized saucepan. Cook for 15 minutes on medium heat, stirring occasionally. Remove from heat. Purée with immersion blender or blender until smooth. Return to stove top and whisk in 3 Tbs corn starch and 1 Tbs milk over medium low. Cook for another 5ish minutes until it has thickened up. Pour over base. Return to fridge and chill for 15 minutes. Melt the chocolate and coconut oil and pour over strawberry layer. Spread out evenly and cool until the chocolate has solidified. Cut into squares and enjoy!
