Sweet Potato Fritters

Thanksgiving is just around the corner and if you are looking for a way to switch up some of those more traditional sides, these SWEET POTATO FRITTERS are the perfect thing! They are crispy on the outside, but soft and super flavorful. Serve them with a maple yogurt sauce and you will have the perfect fall side for your Thanksgiving meal!

Hope everyone stays safe and here a few things we are thankful for this year: being able to spend time with our family even though we will only be with our parents, we are grateful to spend it with them; going to in-person school for almost the entire fall an although we got moved online a day before break began, we know our school is working to get us back on campus; lastly, we are thankful for happiness and health and both of us have had a lot of time what with our late starts at school to be able to enjoy our mornings by going for runs and working on Kitchen Twins which has provided a great outlet in this more difficult times!

  • 3 medium sweet potatoes
  • 1 egg
  • 1/2 cup milk
  • 1 cup frozen corn (softened, you could leave this out before making the recipe)
  • 1/2 cup almond meal
  • 1/4 cup shredded parmesan
  • 1/4 cup shredded cheddar
  • 1 1/2 teaspoons dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • a few cranks of pepper
  • oil for cooking

For the sauce:

  • 1/2 cup greek yogurt
  • 4 teaspoons white wine vinegar
  • 2 teaspoons maple syrup
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder (you could also use fresh garlic)
  • 1/4 teaspoon pepper


Bring a large pot of water to a boil. Peel the sweet potatoes and cut the ends off then chop into cubes, about a 1/2 inch in dimensions. Boil until soft for about 10 minutes. Mash the sweet potato in a large bowl. If you don’t want to do this by hand, feel free to use a food processor. Add the egg and milk first and incorporate then add the rest of the ingredients and mix until fully combined. Heat a large frying pan with a few tablespoons of oil on medium/medium-low heat. Scoop heaping tablespoons of the batter into the pan and press down lightly. Cook for about 3-4 minutes, flipping halfway through. Mix all ingredients for the sauce together and serve and enjoy!
