Guest Chef and Recipe: Ally Dixon’s Peppermint Iced Brownie Bites

We have known Ally since kindergarden and today we are very excited to share her recipe for Peppermint Iced Brownie Bites. Ally shares our love of cooking and this looks delicious so we cannot wait to try it. Mint and chocolate are so yummy together so we think this recipe is going to sky rocket. Peppermint Iced Brownie Bites

BROWNIE INGREDIENTS:                                       Makes 36 bites

1 2/3 cups of sugar

3/4 cups of butter melted

2 tablespoons of water

2 eggs

2 teaspoons vanilla extract

1 1/3 cups of flour

3/4 cups of unsweetened cocoa powder

1/4 teaspoon of salt

ICING  INGREDIENTS:  

1 stick of butter, room temp.

2 cups confectioner’s sugar

2 tablespoons milk

1 And 1/4 teaspoons peppermint extract

2 drops red food coloring opt.

For the brownies:

In a mini cupcake tin put cupcake liners in it. Heat the oven to 350 degrees. In a large bowl, combine sugar, butter and water. Then stir in eggs and vanilla. In medium bowl, combine flour, cocoa, baking powder, and salt. Then add to sugar mix. Bake for 13 min or until toothpick inserted comes out clean. Let cool.

For the icing:

In a medium bowl using a handheld mixer, beat the butter until it is creamy and smooth, about 2 min. Add confectioner’s sugar and milk. Beat for 2 min. on low speed, then increase to high speed for another minute. Add the peppermint extract and food coloring (if using) and beat on high speed for another full minute. Then spread on brownies and enjoy!
